Mchicha Wa Nazi

Ingredients:

  • 1kg fresh spinach

  • 5ml salt

  • 60ml peanut oil

  • 1 cup chopped onions

  • 5ml fresh chopped chili pepper

  • 250ml coconut milk

  • ½ cup desiccated coconut

  • ¼ cup smooth peanut butter

Wash spinach thoroughly under running water several times before chopping.  Use a pot with a lid.  Fry the onions in the oil until golden brown.

Add coconut, salt and chili pepper and continue frying over a low heat for 5 minutes. 

Put the peanut butter and coconut milk in and add the spinach on top.  Cover the pot, turn down the heat and simmer for 15minutes until spinach is cooked.
